Trying to eat a more healthy lifestyle? Incorporating fresh fruits and vegetables into your diet is a great way to jump start a weight loss program while increasing the nutritional value of the food you eat.
Jungle Jim and I are both trying to drop a few pounds and improve our health. As a result, we’re making lunch a light meal and saving those calories and points for dinner when we take a break from working.
This lunch is so simple I’m almost embarrassed to share it….almost.
Super easy fruit and veggie salad
Fruit and Veggie Salad
- 3 large strawberries (sliced)
- 1 medium banana (sliced)
- 1 large carrot (shredded)
- 3 small celery stalks (chopped)
- 1 teaspoon sugar
- 1/2 teaspoon salt
Mix everything together and serve.
I told you it was easy! This recipe makes enough for two medium bowls of fruit salad. It could obviously be doubled or tripled so that you’d have enough for leftovers. The carrots and celery gave a nice contrast to the softer bananas and strawberries. And it was delicious!
With the Weight Watchers Smart Point program everything in the salad, except the sugar, is zero points. We added one Hormel Little Sizzler sausage link to give us a little protein with the salad. The sausage link is 2 points.
Lunch for two points? We both felt satisfied but not stuffed, felt like we’d had a little meat (since we’re definite carnivores!) and our sweet tooth was happy.
