Make Ahead Breakfast Pie

Is it just me or is breakfast the hardest meal of the day to actually get on the table? This recipe is one I adapted from our family’s favorite breakfast casserole that’s made in a 9×13 pan. Something about baking it in a pie crust and serving it with fruit made it just a little more special!

At our house it’s all too common for breakfast to be a grab-and-go affair. Even when the kids were younger we seldom all sat down at the table together for breakfast because everyone was busy getting ready to get to work and school.

In fact, we were much more likely to sit down and have breakfast food for dinner in the evening. We all love breakfast food, we just don’t love the morning rush.  The nice thing about this recipe is that you can prep it the night before and store it in the kitchen until the next morning. Then just pop it in the oven while everyone gets dressed. If you’re making this around holiday time when company is in, then it’s even nicer to have the time to visit with your company instead of being tied up in the kitchen.

Make Ahead Breakfast Pie

Prep Time 10 minutes
Total Time 50 minutes

Ingredients

  • 2 frozen pie shells
  • 1 pound pork sausage
  • 1/2 medium onion chopped
  • 9 medium eggs
  • 1 small can diced green chilis
  • 1 cup milk I use 2%
  • 1/2 cup cheese shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon dry ground mustard
  • salt and pepper to taste

Instructions

  1. Cook sausage with onion and drain all fat.

  2. Beat eggs slightly and add milk - beat together.

  3. Add cheese, green chilis, and spices.

  4. Add sausage and onions to egg mixture and stir together well.

  5. Bake in 400 degree oven for approximately 35-40 minutes till eggs are completely done.


I do suggest that you be sure to put a cookie sheet underneath the pie shells in case you get any overflow. One thing I despise is cleaning out a messy oven! As my Nana would say, “It’s easier to prevent a mess than to clean it up.”

I always add salsa to my egg dishes after cooking but Jungle Jim is a catsup fan. This breakfast pie would be good topped with sour cream or ripe avocado to bring out its Mexican flavor. Add fruit on the side and you’ve got a complete, and healthy, breakfast that didn’t much time to get on the table.

That’s the way I like it – quick and easy!

      Yes, but they aren’t deep dish pie shells.
