Popeye’s Surprise: Pasta, Sausage, & Spinach Dinner

Do you need a meal that you can throw together quickly without a lot of mess to clean up? This dish with pasta, sausage, and spinach fits the bill when you need something on the table in a hurry.

I don’t know a single woman who’s ever said, “Gee, I just have so many quick and easy recipes that I don’t know what to do with them all.” I bet you don’t either.

Everyone these days is busy. Whether you’re just getting in from work, have just a short time period before you have to dash off to a child’s activity (or your own), or just don’t want to spend a lot of time in the kitchen, we all need to be able to get dinner on the table quickly sometimes.

I love this recipe because it’s not only quick and simple, but it’s also hearty. And did I mention that clean up is a breeze? With only one pot and one skillet to wash, you’ll be out of the kitchen in no time. Now that’s my kind of recipe!

Popeye’s Surprise: Pasta, Sausage, & Spinach Dinner

  • 1 pound ground sausage
  • 1 onion, chopped
  • 1 box frozen spinach, thawed (or use fresh)
  • 3 cans Rotel diced tomatoes and green chilies
  • 1 large can black olives, sliced
  • 1/2 tablespoon salt
  • 1 pound macaroni, cooked according to directions and then drained

Cook sausage and chopped onion together in skillet. When sausage is cooked, add spinach and Rotel. Stir together over medium heat until spinach is done.

Add sausage mixture to macaroni. Add black olives and salt. Good served with shredded cheddar cheese on top.
