Do you need a meal that you can throw together quickly without a lot of mess to clean up? This pasta with spinach recipe makes a great entree when you add sausage. It makes dinner time quick, easy, and delicious!

I don’t know a single woman who’s ever said, “Gee, I just have so many quick and easy recipes that I don’t know what to do with them all.”
I bet you don’t either.
Everyone these days is busy. Whether you’re just getting in from work, have just a short time period before you have to dash off to another activity, or just don’t want to spend a lot of time in the kitchen, we all need to be able to get dinner on the table quickly sometimes (okay, all the time).
I love this pasta with spinach recipe because it’s not only quick and simple, but it’s also hearty. And did I mention that clean up is a breeze? With only one pot and one skillet to wash, you’ll be out of the kitchen in no time. Now that’s my kind of recipe!
Pasta with spinach recipe…plus sausage

Popeye’s Surprise
This meal in a bowl is super easy and budget friendly.
Ingredients
- 1 pound ground sausage
- 1 medium onion chopped
- 1 box frozen spinach thawed (or use one bunch of fresh)
- 3 cans diced tomatoes and green chilis Rotel or generic – makes no difference
- 1 15 ounce can black olives sliced
- 1/2 tablespoon salt
- 1 pound macaroni (I used elbows but most any shape is fine) cooked according to directions then drained
Instructions

Put macaroni on to cook according to directions on package.

Cook onion and sausage together in skillet.

When sausage is cooked add spinach and cans of diced tomatoes with green chilies.

Stir together in skillet on medium heat till spinach is cooked.

Once macaroni is cooked and drained, return it to the pot and add sausage mixture, black olives, and season with salt.

Stir together well and serve straight out of the pot.
Recipe Notes
This meal in a bowl is good topped with shredded Cheddar cheese on top. It keeps well in the refrigerator and reheats nicely in the microwave – which is great since it makes a good quantity.
