It’s never been a secret that I think the slow cooker is the greatest invention to ever hit a kitchen. There’s something about dumping ingredients into the pot, walking off, and coming back later to find that dinner is ready to put on the table. This recipe for slow cooker pulled pork is one your family will love because it’s delicious, and you’ll love how easy it is to make.

We try to cut carbs wherever we can at our house. Going low carb helps our blood sugar stay in the range we need it and helps keep us from gaining weight (and we don’t need more of that).
However, we don’t like giving up good flavor and fortunately, there are oodles of great low carb recipes out there that are high on flavor while still helping you achieve your health goals.
This recipe for slow cooker pulled pork is not only delicious, but it comes it literally takes you about ten minutes to put it on to cook. Ten minutes is about all the time I want to spend in the kitchen but I love it when a recipe tastes like it took a long time to prepare.

Slow Cooker Pulled Pork
Ingredients
- 2 lbs pork shoulder
- 2 tsp onion powder
- 1 tsp garlic powder
- 2 tsp dried rosemary
- 2 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1 tsp ground fennel seeds
- 2 tsp cocoa powder
- sea salt & black pepper to taste
- 1/3 cup sugar free chicken broth
- 8 medium iceberg or romaine lettuce leaves
Instructions

Combine all spices in a small bowl and add salt and pepper to suit your family's taste. Mix well and rub into pork.

Put pork into a 5-6 quart slow cooker and add chicken broth. Cook on high for 4 hours or on low for 6 hours

Once the cooking is complete, pull pork apart with two forks or a set of "bear claws" while still inside the pot. Allow the pork to remain in pot so that the meat absorbs the juices and set slow cooker to Warm setting for another 20-30 minutes.

To serve, add a small bit of pre-made cole slaw mix on to a clean lettuce leaf. Top with meat mixture and enjoy!
Now while this recipe calls for the pulled pork to be served on lettuce leaves, it’s also yummy served on warmed hamburger buns. We’ve even turned this into a salad by preparing our salad bowl with mixed greens then adding some of the pulled pork and stirring it all together. Once your meat mixture is cooked, it’s very versatile.
