Sunshine Chicken

Ingredients

  • 1 pound boneless, skinless chicken breast cut into strips
  • 2 Tablespoons butter or margarine
  • 1 teaspoon salt
  • 1/8 teaspoon peppper
  • 2 cups carrots sliced
  • 1 medium onion sliced into rings
  • 1 Tablespoon cornstarch
  • 2/3 cup orange juice
  • 1/3 cup orange marmalade
  • 3-4 Tablespoons brown sugar
  • 1 Tablespoon lemon juice
  • 2 cups long-cooking rice cook according to directions on package

Instructions

  1. Saute chicken strips in butter. Sprinkle with spices and stir in carrots and onion.

  2. In a small bowl, combine cornstarch and orange juice. Stir in lemon juice. Add to skillet and bring to a boil. Cover and simmer 10-15 minutes

  3. Serve over cooked rice.
