Jungle Jim's Shrimp Salad

Ingredients

  • 1 pound shrimp
  • 1 cup black olives sliced
  • 1 cup green olives
  • 1 medium onion finely diced
  • 2 pounds pasta shell or elbows
  • 1 cup celery diced
  • 2 cups Miracle Whip
  • 1/4 cup juice from green olives
  • 2 teaspoons pepper
  • 1/2 teaspoon celery salt
  • paprika

Instructions

  1. Put cooked shrimp in a salt brine (1 qt. water plus 3 T. salt) and let sit while pasta cooks.

  2. Cook pasta according to directions till al dente. Rinse under cold water.

  3. Cut shrimp into pieces then add to cooled pasta.

  4. Add rest of ingredients and stir together till well mixed. Chill in refrigerator for several hours or overnight. Sprinkle with paprika on top for color.
