Slow Cooker Pulled Pork

Ingredients

  • 2 lbs pork shoulder
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp dried rosemary
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp ground fennel seeds
  • 2 tsp cocoa powder
  • sea salt & black pepper to taste
  • 1/3 cup sugar free chicken broth
  • 8 medium iceberg or romaine lettuce leaves

Instructions

  1. Combine all spices in a small bowl and add salt and pepper to suit your family's taste. Mix well and rub into pork.

  2. Put pork into a 5-6 quart slow cooker and add chicken broth. Cook on high for 4 hours or on low for 6 hours

  3. Once the cooking is complete, pull pork apart with two forks or a set of "bear claws" while still inside the pot. Allow the pork to remain in pot so that the meat absorbs the juices and set slow cooker to Warm setting for another 20-30 minutes.

  4. To serve, add a small bit of pre-made cole slaw mix on to a clean lettuce leaf. Top with meat mixture and enjoy!
