A couple of years ago hubby and I went full keto diet for a while. We really liked it (or most of it) and it helped us drop some pounds while still eating well.
One thing we did not want to give up while eating keto was yummy desserts. While we’re not necessarily addicted to sweets, we do enjoy them and want dessert from time to time.
Since we love strawberries and have always enjoyed strawberry shortcake, hubby began experimenting to come up with a way to make strawberry shortcake that was keto friendly. I think he did well with this one. And the addition of the brandy makes this one super yummy.
Recipe for Keto Strawberry Shortcake
Keto Strawberry Shortcake
Ingredients
For the Strawberries:
- 2 cups fresh strawberries diced
- 1/2 cup 1:1 stevia powder
- 1 teaspoon lemon juice
- 2 tablespoons cherry brandy optional
For the Shortcake:
- 4 teaspoons vegetable shortening
- 4 Tablespoons butter
- 4 teaspoons heavy cream
- 2 Tablespoons water plus 2 teaspoons
- 4 large eggs beaten
- 1 Tablespoon lemon zest
- 1 Tablespoon fresh lemon juice
- 1/2 teaspoon vanilla extract
- 1/2 cup almond flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/4 cup 1:1 stevia powder
For the Cream Topping:
- 8 ounces cream cheese softened
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1/2 cup 1:1 stevia powder
Instructions

Clean strawberries and dice them.

Stir strawberries together with stevia and brandy and set aside while you make the shortcakes and cream topping.

To make the shortcakes, melt butter and vegetable shortening in a small bowl in the microwave. In a small mixing bowl combine the heavy cream, water, eggs, lemon juice, lemon zest, and vanilla extract.

Now mix in the melted butter and vegetable shortening.

Add almond flour, baking powder, salt, and 1/4 cup of the stevia. Mix well to produce a batter.

Grease or spray oil into four ramekin dishes and divide the batter equally among them.

Place the ramekins in the microwave and heat them for 3 1/2 minutes on high.

When the shortcakes are done, set them aside to cool for a minute or two and then dump them out of the ramekins onto a plate. Let them continue cooling while you prepare the cream topping

To make the cream topping, place softened cream cheese, heavy cream, sour cream and stevia in a mixing bowl and mix with an electric mixer until everything is well combined and the mixture is smooth.

Place each shortcake on a dessert plate, spoon on the cream topping and top with strawberry mixture
What are ramekin dishes?
Ramekin dishes are those small little round dishes used for a variety of baking needs.
We have some dessert dishes that were part of the dishes we got when we married that are just about the same size as a ramekin dish and we use those when we make this recipe. You may have some other small, round dish that fits the bill just as well even if they aren’t called ramekins.
