Cherry Pie Bites: Easy To Make, Yummy To Taste

I love cherry pie! It’s one of my all-time favorites. However, I do not like recipes that are complicated and hard to make. So this recipe for Cherry Pie Bites is perfect for cooks like me who want something yummy to eat, but quick and easy to make.

Now I probably should be ashamed to admit that I’m a lazy cook – but I’m not. My attitude is that food can taste great but not have to keep you tied to the kitchen forever. There are too many other things in life I’d rather be doing.

But that doesn’t mean that I’m willing to settle for nondescript, mediocre tasting food. If I’m going to ingest the calories, I want it to taste GOOD.

Fortunately, this recipe tastes great and will have you in and out of the kitchen in no time.

Cherry Pie Bites

Ingredients

  • 1 10-count can refrigerator biscuits
  • 1 16 oz can cherry pie filling
  • 2 Tbsp flour
  • nonstick cooking spray for muffin tins
  • 1 Tbsp powdered sugar optional

Instructions

  1. Preheat oven to 400 degrees or to the temperature on the package of refrigerator biscuits.

  2. Sprinkle flour on a clean, dry surface that is suitable to roll your biscuits on.

  3. Lightly coat both sides of each biscuit with flour before rolling out into a thin circle with a rolling pin. Diameter of each circle should be about 4 inches

  4. Spray 10 large muffin tins with nonstick spray and then place one flattened biscuit in each tin. You're making the "crust" for the mini-pie. Crimp top and sides as needed to make the circle fit.

  5. Put approximately 1 Tablespoon of cherry pie filling into each biscuit crust until pie filling is level with top of the tin.

  6. Cook in preheated oven for approximately 12 minutes until biscuit is done and a light golden brown color.

  7. Let pies cool slightly before running a thin knife or spatula around the outside to make sure it doesn't stick to the tin. Lift out carefully to avoid tearing.

  8. Sprinkle with confectioner's sugar if desired and enjoy!

I love that this recipe starts with refrigerator biscuits. No need to make homemade dough. And can it get any easier with a can of pie filling???

Next, just roll the biscuits out to make flattened little circles that will act as the pie “crust”.

Next, put dough into pie tins – crinkle it a bit to make it fit.

Fill with pie filling and enjoy hot out of the oven!

It seriously does not get any easier than this.
