5 Easy Breakfast Ideas To Get You Out The Door Sooner

Some mornings, trying to get everyone out of the house with a satisfied tummy seems to take a minor miracle (or a major one depending on how the day is shaping up). I remember mornings when I was running late, the kids were dragging their feet or were fussy, or some other small calamity had derailed our routine. Those were the days I was most in need of some easy breakfast ideas.

But since getting our kids fed seems to be one of the markers of a ‘good mom’, here are a few ideas for making breakfast one less thing you have to worry about.

2 Super Easy Breakfast Ideas That Even Kids Can Fix:

  1. Cheese toast. This one is so simple that it’s almost embarrassing to list. But a loaf of bread, some sliced cheese (the kind that comes pre-wrapped is the easiest), and a toaster or microwave is all that you need for this quick breakfast. Even a younger child can peel the plastic off the cheese and put it on a slice of bread. Depending on  your child’s age and skill, they can either put this in the toaster oven or microwave, or enlist your help. Adding a slice of tomato is a good way to sneak in a little vegetable. Just don’t tell the kids it’s actually good for them – they don’t have to know everything. Sprinkle with a little celery salt or basil on top and it’s even yummier!
  2. Cottage cheese and fruit. My personal favorite is to top cottage cheese with peaches (canned is fine) and sprinkle with cinnamon. But any fruit will do – blueberries, strawberries, grapes, etc. This is a good way to get in a serving of fruit early in the day. And of course, it’s as easy as scooping with a spoon.

Easy Breakfast Ideas That Require Just A Little Prep (but not too much)

Sausage Cheese Muffins:

I love, love, love recipes that can be baked ahead of time! Whip up a batch (doubled, preferably) on the weekend and you’re ready for the next week.

  • 1 pound sausage, cooked and drained
  • 12 eggs
  • 8 ounces cheddar cheese, shredded
  • dash salt and pepper

Beat eggs and mix with rest of ingredients. Pour into greased muffin tins and bake at 350 degrees for 30 minutes till set. Cool and remove from pan. Muffins can be frozen and then popped into microwave or oven to be reheated. Makes 18 muffins

Six Weeks Bran Muffins:

I love this recipe because it can be prepared ahead of time and then just pop it into the oven on a busy morning and set the timer while you get yourself or the kids ready for the day.

Sift together:

  • 5 cups flour
  • 2 teaspoons salt
  • 5 teaspoons baking soda
  • 3 cups sugar

Then add:

  • 1- 15 ounce box of bran cereal with raisins, and mix well with sifted ingredients

Next, add:

  • 4 eggs, beaten
  • 1 cup oil (I use applesauce in place of oil in almost all of my recipes)
  • 1 quart Buttermilk

Beat all ingredients together well and store in the refrigerator in a covered, air-tight container. The batter will keep for up to six weeks.

To Bake:

  • Dip spoon in batter (but don’t stir the batter – ever) and fill a greased muffin tin 2/3 full.
  • Bake at 375 degrees for 15-20 minutes.

Ham and Tater Crock Pot Breakfast:

I love my crock pot with a passion! In fact, my family has made fun of my crock pot crush for years. Oh well, they just don’t understand how much this amazing appliance has simplified my life. Throw this recipe together, let it cook overnight, and breakfast is ready the next morning when you are.

  • 1 pound frozen tater tots
  • 1/2 pound of diced ham (you can even dice up ham lunch meat to make this even easier)
  • 1 onion, chopped
  • 1 1/2 cup of Cheddar cheese, shredded
  • 6 eggs
  • 1/2 cup milk
  • salt and pepper to taste

Spray crock with non-stick cooking spray or grease lightly. Layer the tots,  ham, onion, and cheese in the crock pot. In bowl, combine eggs, milk, and spices. Pour over ingredients in crock pot and cook on low for 10-12 hours.

Breakfast is served when you’re ready the next morning!
