Sausage, Spinach, & Cauliflower Breakfast

It’s easy for the morning meal to become boring and routine. This recipe for sausage, spinach, & cauliflower breakfast casserole will add some variety and wake up your mornings and keep you from serving the same old things.

We like good food at our house but both hubby and I have gotten to the point where we don’t anything that requires too much standing around or preparation. Something we can throw together in just a few minutes is perfect for us these days.

Sausage, Spinach, & Cauliflower Breakfast Casserole

Ingredients

  • 1 pound pork breakfast sausage hot or mild, browned
  • 12 ounce package frozen cauliflower or fresh equivalent
  • 8 large eggs stirred together
  • 4 ounces cream cheesse melted
  • 2 Tablespoons sweet salted butter melted
  • 4 ounces Mozzarella cheese shredded
  • 3 ounces white cheddar shredded
  • 1 cup raw cilantro chopped
  • 3 cups fresh spinach washed & trimmed
  • 1/4 cup walnuts coarsely chopped

Instructions

  1. Preheat oven to 350 degrees Fahrenheit

  2. Wash and prepare spinach and cilantro

  3. Brown sausage and drain fat

  4. Heat butter and cream cheese together in microwave until partially melted, about 1 minute. Blend together with fork and set aside to cool.

  5. Whisk eggs together in 4-quart bowl until evenly mixed.

  6. Add cream cheese/butter mixture to eggs and mix well. Add white Cheddar cheese and stir till mixture is uniform.

  7. In greased 9×13 pan layer half of the sausage, spinach leaves, and cilantro in that order, followed by a light sprinkle of Mozzarella cheese (be sure to save 1/3 cup for the top). Repeat to make another layer.

  8. Once you've layered your ingredients, pour the egg mixture evenly over the top. The egg mixture will run down into the layers.

  9. Cover the top with the remaining Mozzarella cheese and the walnuts.

  10. Place in heated oven and bake uncovered for 20 minutes. Check internal temperature at this point. We consider egg dishes done when they reach 180 degrees internally. If you want a lightly browned top, bump oven temperature to 450 degrees at this point and cook for an additional 10 minutes

This recipe reheats nicely in the microwave if you have any leftovers. It’s also a great recipe to add to your next brunch or to serve during the holidays when you’ve got guests. It’s perfect served with a piece of toast and jam, a muffin, or a piece of fruit.
