When it’s hot outside (as it frequently is in Texas!) we like a dessert that’s light and cool. We’re also not wild about spending lots of time over a hot stove so we prefer dishes that use the microwave and that are quick and easy.
This recipe fits our warm weather cooking requirements and we like it because it’s yummy! And if you serve it in clear glass dishes, it’s pretty too!
That makes it a very nice dish to serve guests or any time you’d like to go a little above and beyond.

First, wash and prep your berries.

Mix berries together and add blackberry brandy over the top. Let these sit while you prepare rest of ingredients.

Soften your cream cheese. You can do this in the microwave or get it out ahead of time and let it soften on the kitchen counter.

Add heavy cream and sour cream and beat until smooth with electric mixer. Should be the consistency of a thick pudding.

Divide cream cheese mixture between the four dishes. Top with fruit then pour melted preserves over the top of the fruit.

Blackberry Strawberry Delight

Ingredients
- 1/4 cup blackberry brandy
- 1 1/2 cups fresh strawberries washed, stems removed, quartered
- 1/2 cup fresh blackberries
- 1/4 cup sugar free blackberry preserves
- 8 ounces cream cheese softened
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1/2 cup Stevia use kind with a 1:1 ratio (measured equal to sugar)
Instructions

Wash, clean, and quarter your strawberries. and add them to washed blackberries in a shallow dish.

Add brandy to berries and let soak while you prepare the rest of the dish.

Melt blackberry preserves in a microwave sale bowl for 30-60 seconds on high in the microwave. Set aside.

In microwave safe mixing bowl, soften cream cheese for 30-50 seconds on high in the microwave.

Remove from microwave and add heavy cream, and sour cream and beat with an electric beater (mixer) until a thick, smooth mixture forms.

Divide this mixture into four serving dishes.

Spoon in equal portions of the berry mixture and any remaining brandy liquid.

Drizzle melted blackberry preserves over the top of the berries.

Can be served right away or chilled in the refrigerator prior to serving.
You can serve this dish right away, but we prefer it after it’s had a chance to chill in the refrigerator. There’s something about it being cold that just makes it even more enjoyable when it’s hot outside.
