Now, my hubby is not normally a big soup eater, but he actually is the cook behind this creamy spinach soup recipe. He loves watching cooking shows and is always saying something along the lines of, “I saw this particular recipe, but what about if we did…to it instead?”
Since I don’t consider myself a stupid woman…and I like to eat more than I like to cook…I always just nod my head and tell him that sounds great. And amazingly, it always is.
The man definitely knows his way around a kitchen.
Kitchen Supplies You’ll Need To Make This Recipe
Creamy Spinach Soup doesn’t require a lot of fancy kitchen equipment. In fact, if you’ve got any kind of a kitchen at all, you’ve probably already got everything you need.
- cutting board – we like bamboo because it’s a renewable resource
- chef knife
- veggie peeler – I like the kind with a curved handle
- soup kettle
- measuring cups – I’ve loved my Pyrex measuring cups for years!
- measuring spoons
How To Make Creamy Spinach Soup
The hardest part about making this recipe is preparing the vegetables. The rest of the recipe is simply a case of melting, sauteing, measuring, and stirring. It’s that simple (which is the kind of recipe I like best!).
First, gather, clean, and chop your veggies.

Melt butter, saute celery and onion. Then begin adding other veggies.

Add spinach and let wilt.

Add broths and simmer before adding heavy cream.

Creamy Spinach Soup

Ingredients
- 2 Tablespoons butter salted
- 1 1/2 cup celery thinly sliced
- 1 large carrot cut into thin slices with a vegetable peeler
- 1 medium onion coarsely sliced
- 1 cup grape tomatoes cut in halves
- 2 cups fresh spinach sliced into 1/2 inch wide pieces
- 4 Tablespoons cornstarch
- 4 cups chicken broth
- 1 cup beef broth
- 1/8 teaspoon black pepper
- 1/8 teapoon thyme
- 1/4 cup dry white wine
- 1/2 cup heavy cream
Instructions

Melt the butter in the soup kettle and saute the celery and onion until they are tender.

Dissolve the cornstarch in the chicken broth and add the black pepper, thyme, and white wine.

Place the chopped spinach in the kettle with the celery and onions and stir until the spinach wilts.

Now, add the broth mixture you made earlier. Make sure no cornstarch has settled to the bottom prior to pouring.

Simmer the soup for about 10 minutes while stirring frequently. Now add the heavy cream. Continue stirring while the soup warms up for another 3-4 minutes. Serve warm.
