Do you dread breakfast? Is getting everyone fed and out the door a nightmare that you face every single morning? Let’s face it, kids get tired of cereal and working moms don’t have time to cook another meal before even getting in to the shower.
The following breakfast recipes can all be made ahead of time and popped in the oven or microwave for reheating or cooking while mom makes sure that everyone else gets dressed. Who knows – with a little luck maybe you’ll even get to enjoy a cup of coffee in your pajamas before the morning madness gets started.

My Favorite Breakfast Casserole
- 6 eggs, beaten
- 2 cups milk
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 4-5 slices of bread
- 1 pound breakfast sausage, cooked
- 1 cup grated Cheddar Cheese
Mix the first four ingredients together. Place cubed bread in greased 9 x 13 pan. Add layer of sausage then pour egg mixture over it. Cover and refrigerate overnight. Bake at 350 degrees for 30-35 minutes. Sprinkle with cheese before baking.
Can be served with picante sauce or sour cream on top. Personally, I love picante sauce!
This recipe can also be altered. I’ve substituted leftover cubed ham for the breakfast sausage, and I occasionally like to add a can of diced green chilies. Seriously, it’s hard to mess up this recipe.
By the way – this dish freezes like a dream.
Breakfast Pizza
- 3 pkgs Crescent Rolls
- 1 dozen eggs, scrambled and cooked
- 2 small rolls of breakfast sausage – cooked
- 6 cups grated cheese (your family’s favorite)
- Picante sauce
- 1 large package of hash brown potatoes
Heat oven to temperature stated on packages of crescent rolls. Spread crescent rolls over 2 pizza pans and roll together to make a crust. Distribute cooked sausage, cooked scrambled eggs, and uncooked hash browns, cheese, and picante sauce. Cook 15-20 minutes till potatoes are done.
Oatmeal Breakfast Cake
- 3 cups oatmeal
- 1 cup flour
- 2 cups milk
- 2 eggs
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soca
- 1 1/2 cup brown sugar
- 2 teaspoons baking powder
Mix everything together and spread in greased 9 x 13 pan for 25 minutes at 350 degrees.
Breakfast Sandwiches
Makes 2 dozen sandwiches which can be frozen
- 24 English muffins, toasted and buttered
- 2 dozen eggs
- 24 strips of bacon, cooked and drained
- 24 thin slices of Cheddar Cheese
Scramble and cook eggs. Put sandwiches together and wrap each one individually. Wrap each sandwich in a paper towel and freeze several together in a Ziploc bag.
To serve: Microwave on high 1-2 minutes. Or thaw, wrap in foil, and bake 15-20 minutes at 400 degrees.
French Toast Casserole
- 8 slices of bread, cubed
- 8 ounces cream cheese, cubed and softened
- 1/2 stick butter (or margarine), melted
- 12 eggs
- 1/3 cup syrup
- 1/2 teaspoon vanilla extract
- 2 cups milk
- 1 teaspoon cinnamon
Put melted butter in 9 x 13 pan. Put 1/2 of the bread in the pan over butter. Spread cream cheese over bread and cover with the rest of the bread. Mix rest of ingredients an pour over bread. Chill over night.
Bake 45 minutes at 375 degrees. Sprinkle with powdered sugar and serve with syrup on top.
The nice thing about this recipe is that it can be made ahead of time and then put in the oven to cook while mom showers and dresses. By the time mom is dressed, you have a hot breakfast!
