When it’s in season, my family goes nuts over asparagus – I mean we eat it as often as possible. So we’ve come up with some great ways to serve it but one of our favorites is this recipe for microwave steamed Asparagus with Lemony Sauce.

I grew up on canned asparagus. We seldom had fresh asparagus in the little grocery store where we lived. So the first time my hubby steamed fresh asparagus for me I thought I’d died and gone to heaven…there was that much difference.
Since then we’ve done lots of experimenting with different ways to cook fresh asparagus. This recipe lets you steam the asparagus in the microwave which makes it super quick and easy. And the lemony sauce comes together in hardly any time at all.
The sauce isn’t a pucker-up harsh lemon flavor. It’s actually very mild with more of a hint of lemon. It’s pleasant and not overpowering. It’s perfect with Cheesy Keto Italian Meatballs or Cranberry Pork Chops.
Recipe for Microwave Steamed Asparagus with Lemon Sauce
Microwave Steamed Asparagus with Lemony Sauce
Ingredients
- 1 bunch fresh asparagus ends trimmed
- 1/4 cup salad dressing or mayonnaise
- 2 Tablespoons prepared coarse ground mustard
- 5 teaspoons 1:1 Stevia powder
- 2 Tablespoons fresh lemon juice
- 1 Tablespoon lemon zest
Instructions
-
Trim woody ends from asparagus and rinse.
-
Steam asparagus in microwave safe dish for 3 to 6 minutes till tender. The thicker your asparagus, the longer it will take to cook.
-
In a small mixing bowl, combine the salad dressing, mustard, stevia, and lemon juice.
-
Finely mince half of the lemon zest and stir it into the sauce. Reserve the rest of the zest for garnish.
-
Plate a serving of the asparagus and drizzle the sauce over the top. Sprinkle a bit of lemon zest or julienned carrots on top and serve while the asparagus is still warm.
You could, of course, skip the microwave and steam the asparagus on the stove. However, we’ve found that when done correctly, asparagus steamed in the microwave is just as good as when it’s done on the stove…but so much faster.
How to steam asparagus in the microwave
Cut asparagus to length to fit inside a container with a lid and add 1/4 cup of water per pound. Microwave on high for 2 – 3 minutes and then check for to see if it’s done. Continue cooking in one-minute increments until asparagus is desired tenderness. Drain water and serve.
We like to serve asparagus when it’s still got some “crisp” to it. Steamed too long asparagus
