Popcorn Cake: A Fun Treat For Everyone!

We’ve always been popcorn fans at my house. And when our kids were small, any treat with popcorn was greeted with squeals of excitement and happiness. This popcorn cake is a favorite that can be enjoyed by kids of all ages.

One thing I like about this cake is that it’s super easy.

If you can microwave a bag of popcorn (or use an air popper), and melt ingredients together on a stove, then you’ve got all of the skills you need to create this fun treat. That makes it a perfect recipe to make with your young or beginning cook.

You’re also not going to make a big mess by creating a lot of dirty dishes – which is always a plus in my book. You simply need a large kettle or Dutch oven, a sturdy wooden spoon or spatula, and a tube pan.

First, melt your butter and oil in a large pan.

Next, add your marshmallows and stir until melted.

Your mixture should look like the photo below.

Then, add the popcorn and candies and mix well to coat everything with the marshmallow mixture.

Finally, transfer the popcorn mixture to your greased tube pan and let it chill to set.

Cut into whatever sized pieces you like, eat with your hands, and enjoy! It never hurts to have a supply of napkins to catch any crumbs or to wipe your fingers with.

This has much the same consistency as a popcorn ball but with just a little extra fun because of the candies that are added. You could even add other candies according to your tastes.

Popcorn Cake

This tasty combination of popcorn and sweets makes an unusual cake for kids parties, or for sweets on movie night. It is easily prepared in 30 minutes but requires a couple hours in the refrigerator to cool enough to be able to slice and serve.

Ingredients

  • 1 10 oz pkg mini marshmallows this is about 4 cups
  • 3/4 cup vegetable oil
  • 1/2 cup butter
  • 8 cup popped popcorn (2 bags of microwave popcorn works well) be sure to remove kernels that did not pop
  • 1/4 cup Skittles
  • 1/4 cup jelly beans assorted flavors or your favorite (whichever you prefer)
  • 1/2 cup roasted, salted peanuts
  • vegetable shortening to grease a tube pan

Instructions

  1. 1. Grease tube pan liberally prior to mixing ingredients.

  2. 2. Over medium heat, in a large kettle or Dutch oven, heat the marshmallows, butter, and vegetable oil while stirring constantly. Bring the mixture to a boil for 1 minute and remove from the heat. Pour the popcorn into the marshmallow mixture and stir briefly with a stiff spatula to begin coating the popcorn. Next add the peanuts and candies mix everything well.

  3. 3. Finally, using a stiff spatula or spoon, press the popcorn mixture into the tube pan and refrigerate for 2 to 3 hours or overnight.

  4. 4. When the cake is thoroughly chilled, run a thin knife under hot water and slide it around between the cake and the tube pan to help release it from the pan. Invert the cake over a serving dish and tap to release it. If needed, moisten a couple of cup towels and microwave them for 30 seconds on high and wrap the outside of the tube pan to warm the pan enough that the cake will release.

  5. 5. Cut the cake into serving size pieces with a serrated knife.
