Super Simple Fruit Salad

I’ve been eating this salad for as long as I can remember. It made frequent appearances on my grandmother’s table, and then my mother adopted it as one her frequently rotated dishes as well.

That’s because it’s yummy, goes with everything, and is so simple to make that someone who’s never seen the inside of a kitchen could make.

In fact, the simplicity of this recipe makes it perfect for young or beginner cooks. It would be an ideal recipe for a young daughter or granddaughter to make and feel proud to contribute to any meal.

Which is probably why my mom chose to serve t his salad so frequently. She got married at sixteen and to quote my dad, “only knew how to make fudge and tuna casserole.” So she had lots of learning to do in the kitchen, but fortunately this dish was always a hit (unlike the other two dishes – my dad said he didn’t like fudge when they married and that he quickly learned to dislike tuna casserole).

Simple Fruit Salad

Ingredients

  • 1 can cherry pie filling
  • 1 15 oz can chunk pineapple drained
  • 1 small can Mandarin oranges drained
  • 1 cup frozen blueberries no need to thaw ahead of time
  • 3 medium bananas use before they start getting too ripe

Instructions

  1. Gather all ingredients.

  2. Slice bananas. You can help keep them from turning brown by putting them in a sandwich bag with a small amount of lemon juice and coating them with the juice.

  3. Add canned fruit to a medium sized bowl that seals to go in the refrigerator.

  4. Add bananas (fruit only, not any extra lemon juice), and blueberries.

  5. Mix well and put in the refrigerator to chill.

  6. Serve once chilled

I like to reserve the fruit juice (separately from each can) because it’s so yummy. You can pour it into an ice cube tray and freeze. Once frozen you’ve got ice cubes that are perfect to add to an iced tea or lemonade.

As my nana always said, “Make the most out of what you’ve already paid for.” And the young people (or the young at heart) might find these ice trays fun – one makes cubes in the shape of a duck, the other makes cubes in the shape of a penguin.
