We REALLY like easy recipes at my house! But we also refuse to eat things that don’t taste good. Fortunately, this recipe for Texas Pie is quick and easy, and tastes delicious.

My mother was a stickler for finding recipes that didn’t take long to prepare. She didn’t love spending a lot of time in the kitchen because she had too many other things she wanted to do (play the piano and read books).

But her desire to get out of the kitchen in a hurry never meant that we were served food that didn’t taste good. She knew, after all, that any time spent in the kitchen is totally wasted if the food isn’t eaten.

It’s a lesson she taught me as well.

Baking/Cooking Supplies You’ll Need

I used a 9×13 ceramic baking dish to make this recipe this time, but I normally tend to use a 9×13 aluminum baking dish that comes with a lid. I find the lid just makes my life easier when I go to store the leftovers in the refrigerator.

I also have a set of Pyrex mixing bowls that I use often when I’m doing anything in the kitchen.

How To Make Texas Pie

Gather your ingredients.

Spray your pan with a nonstick cooking spray and add the pie filing and pineapple rings.

Melt your butter. Honestly, this is the step that takes the longest…and it only takes a minute.

2 sticks of butter

Add the dry cake mix, shredded coconut, and pecans.

Pour melted butter over the top and pop into the preheated oven.

We like it best when it’s hot out of the oven and we like to add vanilla ice cream to melt in to it.

Course Dessert
Cook Time 2 hours
Servings 12 servings

Ingredients

  • 1 can cherry pie filling
  • 1 15 ounce can pineapple rings undrained
  • 1 1/2 cups shredded coconut
  • 1 box white or yellow cake mix
  • 1 cup pecan halves
  • 2 sticks butter melted

Instructions

  1. Preheat oven to 325 degrees.

  2. Spray 9×13 pan with nonstick spray.

  3. Put pie filling in bottom of 9×13 pan, top with undrained pineapple and shredded cocount.

  4. Pour dry cake mix over the layers then add pecans. Pour melted butter/margarine over everything and bake for approximately 1 hour in heated oven.

  5. Best served warm.
