I don’t know a single woman who’s ever said, “Gee, I just have so many quick and easy recipes that I don’t know what to do with them all.”

I bet you don’t either.

Everyone these days is busy. Whether you’re just getting in from work, have just a short time period before you have to dash off to another activity, or just don’t want to spend a lot of time in the kitchen, we all need to be able to get dinner on the table quickly sometimes (okay, all the time).

I love this pasta with spinach recipe because it’s not only quick and simple, but it’s also hearty. And did I mention that clean up is a breeze? With only one pot and one skillet to wash, you’ll be out of the kitchen in no time. Now that’s my kind of recipe!

Popeye’s Surprise

This meal in a bowl is super easy and budget friendly.

Course Main Course
Cuisine American
Keyword budget friendly, meal in a bowl, pasta
Prep Time 5 minutes
Cook Time 15 minutes

Ingredients

  • 1 pound ground sausage
  • 1 medium onion chopped
  • 1 box frozen spinach thawed (or use one bunch of fresh)
  • 3 cans diced tomatoes and green chilis Rotel or generic – makes no difference
  • 1 15 ounce can black olives sliced
  • 1/2 tablespoon salt
  • 1 pound macaroni (I used elbows but most any shape is fine) cooked according to directions then drained

Instructions

  1. Put macaroni on to cook according to directions on package.

  2. Cook onion and sausage together in skillet.

  3. When sausage is cooked add spinach and cans of diced tomatoes with green chilies.

  4. Stir together in skillet on medium heat till spinach is cooked.

  5. Once macaroni is cooked and drained, return it to the pot and add sausage mixture, black olives, and season with salt.

  6. Stir together well and serve straight out of the pot.

Recipe Notes

This meal in a bowl is good topped with shredded Cheddar cheese on top. It keeps well in the refrigerator and reheats nicely in the microwave – which is great since it makes a good quantity.

Watching the budget has always been a necessity at our house. A couple of years I enrolled in the Grocery Budget Makeover and was amazed at what I learned. I thought I was frugal but I learned tips that were new to me and that were very good for my wallet.

If you could stand to trim some waste out of your food budget then go check the Grocery Budget Makeover out. It’s an easy course with big dividends.

One more thing before you leave…if you hate meal planning but like good food, I know of a solution. It’s called the $5 Meal Plan (because it really is only $5 a month).

It’s from the same people who bring you the Grocery Budget Makeover (which I’ve taken and love). This is a monthly subscription that lets you set the parameters and a meal plan and shopping list is created for you.

The hardest thing you have to do is log into the site to download your plan – that’s it. I just joined and absolutely LOVED the meal plan builder function. It allowed me to further customize the weekly recipes for things I know the folks at my house will eat. I think I’m in love!
