Chicken Zoodle Soup

Many of us associate the cooler months with warm soups. I know I certainly do. While I won’t turn down a yummy soup any time of the year, I gravitate towards preparing them when the temperatures start heading down. This chicken zoodle soup is easy and healthy so you’ll want to give it a taste.

One thing I really like about soups is that they’re generally very easy to make…and I like easy!

We’ve got several soups that are favorites at our house. This recipe for Mom’s Hamburger & Veggie soup is my dad’s favorite. Hubby’s current favorite is this Creamy Spinach Soup. And I love anything with Mexican spices so Chicken Tortilla Soup and Taco Soup always are winners in my book.

However, when I don’t feel well, I tend to revert to comfort food and soups, and chicken noodle has always been my absolute favorite…except that I don’t need all of the carbs. Replacing pasta with zoodles solved that problem for me and I really don’t notice any difference in the texture of the soup.

What You’ll Need To Make Chicken Zoodle Soup

Chicken Zoodle Soup is a pretty basic recipe and you’ve probably got all of the equipment you need already in your kitchen.

  • cutting board – we like bamboo because it’s a renewable resource
  • chef knife
  • slow cooker – this is the one I use…and it’s programmable.
  • measuring cups – I’ve loved my Pyrex measuring cups for years!

How To Make Chicken Zoodle Soup

Dice and season your raw chicken before adding to the slow cooker.

Gather the veggies you’ll need.

Dice and slice before adding to the chicken in the slow cooker.

You can slice the mushrooms if you prefer instead of quartering them. Just go with your preference.

Use a spiralizer to turn the zucchini into zoodles. Just be sure to watch and protect your knuckles.

Now that I’ve discovered zoodles, I just love them! And if you’re trying to watch your carbs, they’re a perfect alternative to traditional pasta noodles…plus by substituting them you’ve managed to sneak in a serving of veggies that otherwise might have been missed (or rejected by picky eaters).

Add your water and give everything a stir before starting the cooking process.

Chicken Zoodle Soup

Ingredients

  • 4 medium chicken breasts raw, chopped into bite sized pieces
  • 4 meduim celery stalks sliced
  • 4 fresh mushroom sliced into quarters
  • 4 medium zucchini spiralized into zoodles
  • 1 medium red onion halved, then sliced
  • 4 teaspoons chicken bouillon powder or 4 cubes
  • 8 cup water
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon sage
  • 1 teaspoon celery seed
  • extra salt & pepper to put on chicken breast pieces

Instructions

  1. Dice raw chicken and sprinkle with salt & pepper to taste. Put in slow cooker.

  2. Prepare rest of veggies and add to slow cooker.

  3. Add seasonings to slow cooker then add water.

  4. Cover and cook on high 4 hours or on low for 6-8 hours.

  5. Garnish with strips of carrots and dollop of shredded Mozarella cheese if desired.

Soups Are Money Savers

Another thing I love about soups is that they’re generally a pretty frugal way to feed people. Since you’re extending the number of servings you get from your meat and veggies, it’s a good way to fill tummies without spending too much at the grocery store.
